Join us on July 6th 2025 as we host our second food festival "2nd Bite for Cancer Research UK" at Wylam Brewery, Newcastle Upon Tyne.
We have invited 20 Michelin rated chefs from around the UK at Wylam Brewery who will be offering some extremely tasty street food from 12pm - 4pm. Last year we were thrilled to raise a staggering, life-saving amount of £82,063.

Here you will find our lineup of our 20 extremely talented Michelin starred chefs who will be serving up some very tasty street food snacks. These chefs will be volunteering their time and efforts into making this an amazing event. We simply can't thank them enough!

BiBi
CHET SHARMA
First on our line up is the incredible award winning Chet Sharma. After dining at Bibi earlier this year we can firmly say it was one of the best dining experiences we’ve had with the most amazing flavours. Chef owner Chet Sharma takes inspiration from his grandmothers (bibis) for many of the dishes and makes you feel like his own family when you are his guest at Bibi.
Chet’s culinary intrigue, coupled with his academic and scientific interests, have made for an impressive and expansive career in hospitality.
During his university studies (which ultimately led to a PhD in physics from the University of Oxford) he worked part time at a number of London’s leading Michelin-starred restaurants, including Dabbous and Locanda Locatelli, as well as at two-starred Le Manoir aux Quat’Saisons. After discovering a passion for hospitality, he went on to work at two Michelin-starred Mugaritz, Simon Rogan’s Umbel Restaurant Group, two-starred Mark Birchall’s Moor Hall, and the late, also two-starred, The Ledbury.
In September 2021 he opened the incredible Bibi in Mayfair.
BiBi was GQ Restaurant of the Year 2022, won Opening of the Year and placed at no. 5 in the National Restaurant Awards 2022, was Squaremeal’s 2022 Best Restaurant in London, and won Menu of the Year at the 2022 Cateys.

Ynyshir
Without a doubt the most requested chef we’ve had this year for our lineup is none other than Gareth Ward.
Gareth Ward is head chef and co-owner of Ynyshir, the most highly-awarded restaurant in Wales, and named Best Restaurant in the UK two years running in 2022 and 2023. It has two Michelin stars, five AA rosettes, and is ranked in the UK’s top five UK restaurants by the Good Food Guide ...who also named Gareth 2019 Chef of the Year.
The only thing celebrated at Ynyshir as much as his food, is his love for Newcastle United. There’s even a subtle hint as you are sitting in the bar- howay the lads! Thank you so much for taking part Gareth!
GARETH WARD

Upstairs
Our next chef in our lineup, and first returning chef, is the incredible Tom Shepherd, chef and owner of Upstairs by Tom Shepherd in Lichfield, which was awarded a Michelin Star just four months after opening.
In 2023, Tom represented the Central Region on the BBC’s Great British Menu. He went on to win the main course round and cooked at the Banquet where he served his infamous take on Desperate Dan’s Cow Pie.
Last year Tom cooked 500 of his delicious GBM winning pies and was one of the first to sell out! Who thinks Tom should do his ‘Desperate Dan Cow Pie’ again this year?

HIDE
Josh is the chef director of 1 Michelin starred Hide in London.
Josh has a very impressive CV, working in some of the very best restaurants including; Le Manoir Aux Quat’Saisons, L’Autre Pied, Elystan Street and Development Chef for Belazu. This last year he was promoted to Chef Director of one of our absolute favourite restaurants, HIDE. If you’ve ever dined here before, you will know what an incredible experience this restaurant is, whether it’s for breakfast lunch or dinner. Josh has a team of over 50 chefs who excel at what they do and we are beyond excited that he will be taking part in this year’s festival.

The Glenturret Lalique
We have the pleasure of announcing
2 Michelin starred Mark Donald from Glenturret Lalique as the next chef on our line up.
Mark is an incredible chef who has experience working in some of the best restaurants in the World, including a season at Noma in Copenhagen, Andrew Fairlie at Gleneagles, Hibiscus in Mayfair, Bentley in Sydney, Number One at Balmoral and more recently settling in at Glenturret Lalique, earning a Michelin star after 7 months and then 2 Michelin stars in 2024. We are absolutely thrilled that Mark will be joining our formidable line up. A huge thank you Mark!!
MARK DONALD

Restaurant Mýse
Another returning chef for this years 2nd Bite festival is the amazing Josh Overington joined by Myse Head Chef Jamie Keeble!
Since opening in 2023 the team at Myse have been unstoppable, earning a Michelin star in 2024 as well as Josh and wife Victoria receiving ‘Restaurateurs of the year’ by the National Restaural Awards and more recently being rated in the top 500 restaurants in the World by La Liste. Those of you who came to our first festival last year will remember that Josh and his team served up the most incredible Pork Flatbreads, this year they are planning to do something sweet and we can not wait!
A huge thank you to everyone at Myse, especially Josh and Vix for agreeing to do it again!
JOSH OVERINGTON

Restaurant St Barts
Welcoming new comer Johnnie Crowe of Michelin star and Green Michelin star Restaurant St. Barts- a culmination of passion & hard work from three long-term friends Johnnie, Luke & Toby – the team also behind Nest restaurant in Hackney & Nest Farmhouse.
Johnnies food has Sustainability at its core and is the value by which St Bart’s operates.
Johnnie is quoted as saying “The provenance and locality of produce is essential for us - we lived by this philosophy throughout the design and build of the restaurant. We work with small scale farmers for our meat and use the entire animal to avoid any waste.”
Another absolute stellar chef added to this years line up!

ALEX BOND

Alchemilla
Our next chef on the lineup is Alex Bond of Alchemilla in Nottingham- his debut restaurant.
Alchemilla was awarded its first Michelin star in 2019 which it has held ever since. If you’re unfamiliar with Alex’s style of cooking you can expect big yet balanced flavours, inspired, exciting cooking that utilises sustainably sourced ingredients. As well as injecting plenty of his own personality into the dishes, he has an innate skill for bringing together sweet, sour, salty and citrus elements in wonderful harmony.
Alex’s food is a delicate fusion of cuisines, pushing the boundaries of taste, creativity and experience. Expect world influences with a British grounding. He sources the best produce our incredible island has to offer from the highlands of Scotland down to the Cornish waters.
We can’t wait to see what he cooks up for Second Bite- see you in July Alex!
Epicurean Duo
Some of our Great British Menu fans will recognise Samira for representing the North East just last year. She has had a fantastic career so far most recently working as Head Chef at Restaurant 88 at Grantley Hall and now her and partner George Birtwell have launched the Epicurean Duo, a new exclusive dining concept. We are so excited to see them succeed!
Samira says, ‘I’m supporting Second Bite because it brings together great food and a great cause - helping to fund vital cancer research while enjoying amazing flavours! I can’t wait to be a part of something that truly makes a difference!’

Grace & Savour
DAVID TAYLOR
Another returning chef is the incredible David Taylor. David and wife Annette have the absolutely stunning Michelin starred Grace & Savour at Hampton Manor in Solihull and just this recently launched their 2nd restaurant Kynd.
David started his career under the tutelage of Glynn Purnell before travelling to work in some of the best kitchens in North America and Scandinavia. His finishing school was at Maaemo in Norway where he was part of the team that won three Michelin stars.
In 2023 Grace & Savour was awarded Number 1 restaurant in the UK just a year after opening. David is the first chef we asked to return for this year’s event. Last year he did the most delicious dish of Chicken from Rhug, Green Asparagus, Miso and Chicken Wing Butter. We can’t wait to see what he does this year! You may also recognise David from this years Great British Menu competition.

Hjem
Hjem is the dream project of Swedish chef Alex Nietosvuori and his wife, Northumberland-born Ally Thompson who have joined forces to create a destination restaurant which represents the very best of their respective backgrounds, in the heart of Hadrian’s Wall country.
Marina O’Loughlin described Hjem shortly after opening: “It’s the sort of restaurant that makes me remember why I love this job, that makes me believe - against all evidence to the contrary - that everything is right with the world.”
Gaining a Michelin star in 2021, the first ever for a Northumberland Restaurant, Alex’s modern Scandinavian style is equally beautiful as it is precise. This year it was announced that the team behind Hjem were gearing up for their next restaurant, Freya, which is to be built from the ground up alongside an impressive walled garden in the Tyne Valley.

WILL LOCKWOOD

Roots
Next on our lineup is returning chef Will Lockwood. Head chef of Michelin-starred restaurant Roots in York, North East and Yorkshires Great British Menu winner, Will, who not only got his canapé but also his pre dessert to the banquet in 2023.
Situated alongside the River Ouse in the historic city of York, Roots ethos of seasonality and sustainability leads to creative, modern dishes which are carefully prepared and deceptively simple to look at, yet offer great refinement and depth of flavour. Set within an attractive Arts and Crafts building with nods to its former life as a pub still remaining. With innovative and creative tasting menus with produce and preservation at the core of his inspiration.

The Forestside
We’re thrilled to announce the return of our next chef, Michelin Starred Paul Leonard of The Forest Side who last year produced an incredible stand out dish of ‘BBQ Herdwick Belly on Flatbread’.
Paul has been praised for his loving and simple use of local produce. This celebration of provenance is an ethos he has carried with him to The Forest Side, where the culinary experience is designed to be a reflection of the landscape of the Lakes in which it sits.
His artful combination of interesting and unusual flavours stemming from his love of the countryside and the fabulous ingredients with which he is blessed with in Cumbria, has earned him Chef of the year in last years Cumbria life awards.
Welcome back for a 2nd Bite Paul, we look forward to cooking along side you once again this July 6th at Wylam Brewery.

PAM BRUNTON
Inver
Returning chef Pam Brunton and partner Rob Latimer, who are chef and co owners of Inver, a small, characterful restaurant on the shores of Loch Fyne, on Scotland’s west coast have won countless awards and recognition.
Pam’s cookery has been described as ‘something to believe in’ and ‘clever and honest’ with Inver being described as ‘paradise at the end of the world.’
Inver’s offerings are a celebration of Scotland’s larder; dishes sing of the seasons and are served with a simplicity and flair that respects provenance and quality of ingredients.
With the charity meaning so much to Pam, she had this to say;
“It’s an absolute honour to be able to contribute something to Cancer Research’s great work. Everyone today is affected by cancer in some way- and it is always the things we can’t do to help that trouble us more than the things we can.”

Are dogs allowed at the event?Yes, all dogs are welcome at Wylam Brewery.

What dietary requirements will be catered for?We have asked all of the chefs taking part to be mindful of allergies and intolerences and to create variations where possible. Sadly, not all chefs will be able to offer an alternative to their dishes but we have tried to keep this as flexible as possible. There will be plenty of vegetarian options however vegan options will not be available.

Is there parking?Finding us is a walk in the park… quite literally! Please note: There is no vehicular access permitted through the park to the brewery other than for the mobility impaired. Such access needs to be pre-booked. If travelling by Car the nearest Public Car Park is on Claremont Road. The Car Park is open 24 hrs. Charges apply Mon-Sun (8am-6pm), Free Mon-Sun (6pm-8am). Are kids welcome to the event?Yes, children are welcome to the event.

How many tokens should I buy?Each chef is doing one dish at the value of one token. We recommend 5-6 per person so that they can try 5-6 chefs. The chef's are creating dishes that are roughly the size of a starter portion so it totally depends on how much you think you can eat and how many chefs you want to try!

Do I need a ticket?This is a free event with no ticket required for access to the brewery. To enjoy some food from our lineup of chefs you will need a token. We recommend 5 tokens per person. If you are unable to get any tokens, there are other ways you can support CRUK on the day whether this is by contributing to the auction or donating in our charity buckets.
